Risotto with vegetables and seafood
Ingredients
  • 350 g rice
  • 150 ml dry white wine
  • 800 ml vegetable stock
  • 200 g frozen shrimps "Vodniy mir"
  • 200 g frozen mussels "Vodniy mir"
  • 50 g parmesan cheese
  • 1 onion
  • 100 g green peas
  • 1 carrot
  • to taste spices

Instructions

  1. Dice 1 onion and carrot.
  2. Heat the olive oil and sautée the onion, carrot and garlic until lightly browned.
  3. Add seafood mix, green peas and dry wine.
  4. Continue cooking for about 5 minutes over medium heat.
  5. Stir in the rice, toss and gradually pour the hot stock.
  6. Bring everything to a boil.
  7. Reduce the heat to low, stir the mixture well, cover it and cook for another 30 minutes.
  8. Do not mix until the liquid is evaporated.
  9. At the end, top up the dish with parmesan cheese.
