Forshmak (herring from Odessa)
  • 180 g pickled herring slices “Vodniy mir"
  • 20 g butter
  • 5 ml sunflower oil
  • 10 g green apples
  • 20 ml diary cream 35%
  • 20 g white bread
  • 1 egg
  • 40 g Philadelphia cheese
  • 1 tsp. apple vinegar


  1. Place breadcrumb into a diary cream for 20 minutes.
  2. Meanwhile dice the onion, apples and previously boiled egg.
  3. Mince herring slices.
  4. Squeeze lightly the breadcrumb and stir together with the diced onion, apples, eggs and minced herring in a deep bowl.
  5. Add sunflower oil, cheese and vinegar. Mix thoroughly.
  6. Season with salt and pepper.
  7. Garnish with bread croutons, herbs and butter.
